The D.O.

This Designation of Origin compose numerous municipalities of Barcelona, Tarragona, Lleida, Girona, La Rioja, Alava, Zaragoza, Navarra, Valencia and Badajoz, among which stands out the town of Sant Sadurní , where it is made more than 75 % of total production . The climate is Mediterranean , with some areas of higher production and fresh , settling on soils that vary according to the processing area. The cava was born in the late nineteenth century as an imitation of champagne, was consolidated in the 20s and developed her strong growth in the domestic market of the 60s and 70s. But the really spectacular growth was consolidated in the 80s , becoming a leader in the global market for sparkling wine product. It is made by the champagne method, but in 1994 , based on Community law, had to replace the description by the traditional method. Currently there are 268 companies on processing of cava . cava It is a quality sparkling wine whose production and aging process takes place in the same bottle . The minimum aging time is 9 months . Most of cava consumption is concentrated in periods of great festivals and celebrations , especially in the Christmas and New Year, but is spreading to all seasons.
